½ cup butter or margarine
½ cup light brown sugar, firmly packed
½ cup granulated sugar
1 large egg
1 can (8 ounces) crushed pineapple, undrained
1½ cups rolled oats
1 cup all-purpose flour
½ tsp bicarbonate soda
½ tsp cinnamon
½ tsp salt
Cream butter and sugars until light and fluffy; beat in egg. Stir in pineapple and oats. Sift together the flour, baking soda, cinnamon and salt. Add sifted mixture to the pineapple mixture; stir until well blended.
Drop by teaspoonfuls. Bake pineapple biscuits at 175° C for about 20 - 25 minutes.
