Resipi...Fried Black Pepper Udon

6 packets Udon Noodles

8 shallots )chopped
6 pips garlic )chopped
4 eggs, lightly beaten
4Tb chili boh or more
100g chicken breast-cube
100g prawns
100g fishball
50g shiitake mushroom (or any type)-sliced
100g carrot-shredded
200g beansprout

Seasoning
3 Tb oyster sauce
1/2 Tb sugar
1/2 Tb dark soya sauce
1Tb ground black pepper
1tsp white pepper

1/2 head of lettuce shredded for top garnish
red chilli-sliced
fried onions
spring onions

1.Heat up wok with 3Tb oil, saute garlic and shallots until fragrant.
2.Add in beaten eggs, stir till cooked. Add in chili boh and fry till aromatic.
3.Add in chicken meat, prawns, fishball and mushroom, stir fry till nearly cooked. Add in udon noodles followed by carrots and seasoning. Add a little water if noodles is still too hard. Cover up.
4.Finally add in beansprout and fry over High flame just until well mixed.
5.Dish up and top with shredded lettuce, cut chilli and fried onions.
