Strawberry Cream Cheese Buttercream

125gm cream cheese, at room temp
1/4 cup unsalted butter, at room temp
pinch of salt
2 1/2 cups icing sugar
1/3 cup strawberry jam
1 tsp lemon zest

1. In a bowl, using an electric mixer on medium high speed, beat together cream cheese, butter & salt until creamy. With mixer on low spped, beat in icing sugar 1/2 cup at a time so that the sugar doesnt fly all over the place. Increase speed to medium-high and bat until light & fluffy. Beat in strawberry jam & lemon zest.

2. Spread frosting over cooled cupcakes and refrigerate until ready to serve.
